Whole Wheat Olive Crackers 

I found this great recipe in one of the groups I am part of and I tried it immediately as it is simple, Healthy and super tasty.

I did this in the food Processor, so the dough was ready like in a minute.



Ingredients

Whole Wheat Flour - 1 Cup
Olive Oil - 5 Tablespoon
Salt - To Taste
Curry Leaves - 5 (Chopped)
Coriander Leaves - 2 Twigs (Chopped)
Dried Italian Herbs - 1/2 Teaspoon (Optional, add your choice of Herbs)
Garlic Powder - 1/2 Teaspoon (Or else 2 Cloves of Garlic)
Baking Powder - 1/2 teaspoon
Black Pepper - 1/2 Teaspoon
Water - As required

Method:

  • Add all the ingredients except water in a bowl and mix well.
  • Add water little by Little and knead into a smooth pliable Dough.
  • I did this step in a food processor.
  • Let it rest for 15 minutes.
  • Pre heat the oven at 180C and line a Baking tray with aluminium foil and grease the foil with Olive Oil.
  • Dust the kitchen counter with some flour, place the rested dough and roll into a big disc using a rolling Pin.
  • Keep the thickness as 1 mm while rolling it.
  • Using a Knife or Pizza cutter, cut them into desired shape and place them on the greased aluminium foil.
  • Brush the top of the Crackers with Some Olive Oil.
  • Bake this at 180C for 20 minutes, flip the crackers after 10 minutes so it is cooked on both sides.
  • Every Oven is different so keep a close eyes on the baking time. 
  • The Baking time will also vary based on the thickness of these crackers. 
  • Once it is done, it may be soft, once it cools done it becomes crispy.
  • Once cooled down, store it in a air tight container.
  • If you store it for some time and if it becomes soft, just heat for a minute in Oven.

Karachi Biscuits/Fruit Biscuits

Yes. This is the world famous Karachi Biscuits that I attempted to make. Believe me the end result was as tasty as the ones we buy from the Karachi bakery. Now no need for any of my friends to come from Hyderabad to taste these Melt in mouth Biscuits.

I found this recipe from my Favorite chef's website,Vahrehvah and adapted it to make the Karachi Biscuits.


Ingredients
AFP/Maida - 250 Grams
Custard Powder - 50 Grams
Sugar - 150 Grams
Butter - 150 Grams
Baking Powder - 1 Teaspoon
Milk Powder - 15 Grams
Vanilla Essence - Few Drops
Mixed Nuts and Dry Fruits - 150 Grams (See notes)
Milk - 2 Tablespoon


Method


  1. In a bowl, cream butter,sugar and vanilla essence together. 
  2. In another bowl, mix Maida,Custard powder,milk powder,baking powder and mixed nuts and fruits.
  3. Now add the mixed dry ingredients with the wet ingredients and make a dough.
  4. If required add 2 tablespoon of milk to get the mixture to a dough consistency. 
  5. Divide the dough into equal sized balls and slightly flatten them
  6. Arrange them on a greased baking tray. Ensue that there is space between each of them as they will expand.
  7. Bake them in a oven for 10-15 minutes at 180C

Notes:


  • I have used cashew,raisins,tutti fruit,pista,badam. The original Karachi Recipe usually comes with only Cashew and tutti frutti.
  • I have baked some of them for a little longer as I like them slightly on a overcooked side. so you see some of the cookies litle brown than the others.

Melting Moments Cookies

I love cookies. It is been quite some time I made cookies. If my memory is right the last time I made cookies was the Scottish Cookies. So I decided to bake some Cookies for this weekend.

So picked this recipe from my most Favorite website of VahChef. This website is my Go To website for all recipes. This is the website where I search for any of my recipes and the recipes given by Vahchef is 100% fool Proof. You can Half the recipe if you want. This recipe gave me about 2 Dozens of cookies.


Ingredients

Maida/AFP - 200 Grams
Butter - 100 Grams (At room Temperature)
Sugar - 120 Grams
Vanilla Essence - Few Drops
Egg - 1
Milk - 2 Tablespoon  2 Tablespoon
CornFlakes - 3-4 Tablespoons

Method

In a Mixing bowl, cream the butter and sugar. To this add egg and milk and mix it well.

To this add the maida and mix. Don't knead too much. This mixture will be little sticky and that's how we want this mixture to be.

Crush the cornflakes using your fingertips and keep it aside. In another small bowl keep 2 tablespoon of milk.

Now dust you hands with maida and take a marble size ball of the mixture and dip it in the milk and then roll it in crushed cornflakes.

Arrange this in the Baking tray lined with aluminium Foil.

Bake the cookies at 180C for 20-25 minutes. (Each oven is different so keep a close eye after 15 minutes).

The Cornflakes helps in retaining the shape of the cookies and also makes the cookies super crunchy.

Scottish Shortbread Cookies

WOW!!! Literally WOW! If you have had these cookies, you would know what I am talking about.

This cookies are literally melt in the mouth Cookies. The buttery flavor is super amazing and eating it was super stress reliever (or maybe that's what I felt LOL)


Ingredients
Butter - 170 Grams (At room temperature)
Sugar - 85 Grams (Powdered)
Maida -240 Grams
Baking Powder - 1/4 Teaspoon
Vanilla Essence - Few Drops
Milk powder - 10 Grams

Method

In a Mixing bowl, Cream the butter and sugar. Meanwhile, sift the Maida and baking Powder.

Once the Butter and sugar is creamed, add the essence and Maida and you will get a Crumbly Dough.

Now,cover this dough in a cling film and refrigerate it for 20 minutes. Then take the dough ff the cling film and take it on a lightly floured surface.

Using a rolling pin, shape it into  rectangle. Using a knife or a pizza cutter, cut the rectangle into small rectangles.

Using a fork, poke them. Arrange them on a greased tray.Do not place them so close, leave some space between them.

In a pre heated oven, Bake it for 20 minutes at 150C . Every oven is different so keep a close eye.

Once done, remove it to a ooling rack and store in a air tight

Olive Oil Crackers

I got this recipe from here. I always wanted to make Crackers. So as soon as I found this recipe I made it the same weekend.

It was light,Fluffy and easy to make. The only time consuming part is rolling them.

It was tasting great with Salad or Tea.




Ingredients

All Purpose Flour/Maida - 20 Grams
Whole Wheat Flour - 50 Grams
Baking Powder - 1 Teaspoon
Warm Water - 115 Ml
Olive Oil - 25 Ml
Salt - Per Taste
Red chilli Powder - 1 Teaspoon
Black Pepper Powder - 1/2 Teaspoon
Oregano - 1 Tablespoon (Optional)

Method

In  a mixing bowl, add all the ingredients and knead well till you get a soft and sift dough.

Cover the dough with a cling film, and allow it to rest in refrigerator for an hour.

After an hour, bring the dough to a floured surface. Please use very little flour so that the Crackers does not get floury.

After kneading, divide them into small portions and using a roll pin roll them into thin Circles or any shape of your choice.

I actually took 1/4th of dough, rolled them into thin sheets and used a cookie cutter and cut them into circles.

Meanwhile, Pre heat the oven at 220c for 15 minutes. Line a baking tray with Aluminium foil and grease it with olive oil.

Place the rolled crackers on the Lined Baking Tray and Bake at 220c for 5-7 minutes.

Keep a close eyes as the cooking time varies on how Thin the Crackers are. They tend to burn soon as do keep a close eyes.

Oats Biscuits

I love to bake. The beautiful aroma that fills the house while baking is amazing.The moment I found this recipe online I jumped and went to my kitchen to make it. It was so easy and simple. The fabulous thing about this cookies is that it is eggless and melts in your mouth.

 Ingredients

Oats - 1 Cup (I used Quaker Oats)
Butter - 1/4 Cup
Sugar - 1/4 CUp
Maida/All purpose Flour - 3 Tablespoon

Method

In a Mixer, powder the Sugar. Take the powdered sugar in a bowl , add the butter and cream it well.

Take the Oats in a mixer and make it also into a powder.

To the Butter sugar mixture add the powdered oats and mix well, then add the all purpose flour and mix well.

Cover the bowl with a cling Film and let it sit in Refrigerator for 15-30 minutes.

After 15 - 30 minutes remove the mixture from the refrigerator and make divide them into equal sized balls.

Slightly flatten the balls and arrange them on a baking tray lined with Aluminium foil.

Bake it the preheated oven for 15 to 20 minutes at 180 degree Celsius.





Tips


  • The cookies will be extremely soft when it is cooked so allow it to cool down.
  • Don't worry if it breaks it is hot, allow it to cool, it will be fine.
