Apple Pie - With healthy Crust

I am a big fan of apple based baking after my successful attempts at Apple Roulade and Apple Cake. So this time I decided bake the famous Apple Pie. I have already posted the healthy version of crust that can be made here. You can either do the same crust but I made some changes to it and added some Wheat, Oats and APF and made it.

When you eat this you realize why it is called as a classic dish. Serve it with some vanilla Ice Cream and it tastes yum. I had sprinkled some sugar on the top of the Pie that's why you see some brown caramel on top of the pie.





Ingredients

For the Pie Crust:
Wheat  Flour - 1 Cup
Oats Flour - 1/2 Cup (I just used quaker Oats)
APF or Maida - 1/2 Cup
Milk - 1/2 Cup
Salt - a Pinch
Baking powder - 1/2 teaspoon


For the Pie Filling:
Apple - 2 (I used the Red ones, Peeled Cored and Sliced)
Cinnamon Powder - 1/2 teaspoon (I added more than 1/2 teaspoon as in my house they like apple-Cinnamon Combo)
Sugar - 2 - 3 Tablespoon (brown Sugar works best, as I did not have it I have used Regular Sugar)
Butter - 2-3 tablespoon
Wheat Flour - 2 Tablespoon (I used it to absorb moisture as I used Juicy apples, If you use Green apples you can skip this)

Method






  • Dry roast the Oats for couple of minutes and then grind it into a powder.
  • To this mix all the ingredients except milk and Oil
  • To this mixture, add butter and oil and rub it in till it looks like bread crumbs.
  • To this add milk little by little and knead it into a smooth dough
  • Cover it with a cling film and rest it in refrigerator for 15 minutes. You can skip this step, if you are pressed for time.
  • Divide the dough into 2 portions.
  • Now take a tart tin or Pie dish and slightly grease it with butter or oil
  • Take one portion of the Roll the prepared dough into big circle and place it on the Tart tin and cut off the extra edges.
  • Poke the Tart shell using a fork so the base is crispy.
  • Bake it for 10-15 minutes at 200C or it is golden brown. You can skip this step and Bake it along with the filling and the top sheet.
  • I do this as I like my Pie to be super crispy.
  • Meanwhile, take a mixing bowl and place the sliced apples, cinnamon powder, sugar,butter and wheat flour.
  • Place the prepared apple filling on prepared Pie/tart (Baked or not baled - It does not matter)
  • Now take the another portion of the prepared dough and using a rolling pin roll it into a circle.
  • Place this on top of the Pie and cut the extra frills.
  • Using a sharp knife make a cross of top of the pie.
  • I brushed some butter on top and I sprinkled some sugar on top of it for the caramely effect. 
  • You can sprinkle some sugar or not.
  • Now bake this in a pre -heated Oven at  180c for 50-60 minutes.

    Quiche

    I have never made Quiche at home before and believe you in me, once you make this at home, you will not eat it outside.

    When you make this at home it tastes so fresh and yummy. Do try this. usually it is made with eggs, however, I have made it egg less.



    Ingredients
    Wheat - Oats Tart Shell - 1
    Spinach  - 1 Bunch (Washed and Chopped)
    Vegetables of You choice - 1 Cup (I have used Baby Corn, Broccoli, Mushroom )
    Onion - 1 (Chopped)
    Paneer or Cottage Cheese
    Milk - 1 Tablespoon
    Dry Herbs - 1 Tablespoon or to Taste (I have used Dried Thyme, Rosemary and Oregano)
    Black pepper powder - 1/2 teaspoon
    Red CHilly Flakes - 1/2 Teaspoon or to taste
    Garlic - 3 pods
    Cheddar Cheese - 4 Tabespoon or to taste
    Olive Oil - 2 Tablespoon
    Salt - To taste

    Method

    • Make the Tart shell as per the recipe.
    • In a pan, add the olive Oil and add the Garlic and Onion and saute.
    • After a minute, add the vegetables and saute for 2 minutes and then add the spinach and cook for 2 minutes.
    • During the cooking if the veggies r greens leave any water don't discard, it will be fine once it is baked. 
    • Add Salt and Dry Herbs and Pepper powder and stir and remove from flame.
    • Allow it to come to room temperature.
    • Meanwhile, mix paneer and Milk and keep it.
    • Once the spinach - Veggie mix is cooled add the Paneer - Milk mixture and mix.
    • Now take the cooled tart and add the Prepared Veggie-spinach-paneer mixture.
    • Sprinkle some dried herbs, chilly flakes on top of them.
    • On this add grated Cheese as per your wish, the more the better the taste.
    • Bake this for 30-45 minutes or till it is done at 150 C. 
    • Cool it completely before slicing.

    Lemon Tart

    Are you a Lemon Lover? Then this recipe is a keeper. It is so yum and refreshing and simple recipe to put together. Lemon Curd can be made ahead and kept in refrigerator.

    The Tart base is made with Wheat and Oats so it is healthy too.

    Ingredients

    Whole Wheat Oats Tart Shell - 1
    Lemon Curd - As required (If you use the amount specified in the recipe, it will adequate)

    Method

    • Pre heat the oven at 150C for 10 minutes.
    • Pour the Prepared Lemon Curd into the Tart shell (Should be at Room temperature) and bake at 150 C for 20-20 minutes .
    • Allow it to cool and then keep it in refrigerator till serving
    • Slice and serve.

    Basic Whole Wheat Oats Pastry Shell / Whole Wheat Tart 

    Pastry shell or Tart shell is a basic base to make any Tart or Quiche. It is usually cooked with loads of butter and Maida, so I did some searching and found this healthy version of Shell.

    Believe you in me, this Tart also tastes just as amazing as the regular Tart shell. I plan to post the recipe of the Maida version too very soon. It is high time I need to work on my time management, these days with too many things my time management is going hay wire, need to fix it soon.



    Ingredients

    Whole Wheat Flour  - 1 Cup
    Rolled Oats - 1/2 Cup (I have used Quaker)
    Olive Oil - 1/3 Cup (Use Melted butter for a buttery tasting shell)
    Dried herbs - 1 Teaspoon (Optional)
    Garlic Powder - 1/2 Teaspoon (Optional)
    Baking powder - 1/2 Teaspoon
    Salt -  1/2 Teaspoon
    Milk - 1/2 Cup (Can use water too)

    Method

    Whole Wheat Garlic Scones 

    Scones are a fantastic accompaniment with Tea/Coffee. I make them Crispy outside and slightly chewy inside so I get the feel of layers of texture. I have tried this recipe with garlic powder and fresh garlic and they both taste great. I used the recipe from here.


    Ingredients
    Whole Wheat Flour - 1 Cup
    Quick Cooking Oats - 1/4 Cup (I used Quaker)
    Fresh Garlic - 6 (Grated, adjust to taste, I like garlic so I have used it more)
    Curd - 1/2 Cup
    Oil or Cheese - 1/4 Cup (I used a combination of Rice Bran Oil and Cheddar Cheese)
    Milk - 1/4 Cup  (You can use Water or combination of water and Milk)
    Baking powder - 1/2 Teaspoon
    Red Chilly powder - 1/2 Teaspoon
    Salt - 1/4 Teaspoon

    Method

    • In a big bowl add all the ingredients except milk and mix them well.
    • Once everything is mixed, add milk little by little and knead till you get a dough consistency.
    • Rest it for 10 minutes.
    • Place the dough on a floured surface and roll it using a rolling pin.
    • The thickness can be 1/2 inch.
    • Now using a cookie cutter cut them into desired shapes.
    • Place this on a baking tray lined with aluminium foil or Parchment paper.
    • Prick the scones using a fork.
    • Bake it in a pre heated oven for 10-15 minutes or till it is slightly golden brown at 180C.

    Whole Wheat Banana Bread - Eggless 

    I am sure all of us have come across situation where we buy dozens of banana and by the time we consume them some of them become over ripe and black.

    We dont have any other option but throw them away. Not anymore, we can make beautiful,healthy and tasty Bread loaf with them.

     I found the Banana Bread with Maida online and just substituted with Wheat and Oats. If you want you can just use Maida or fifty-fifty Maida or Wheat flour.

    Ingredients

    Banana - 1 Cup (I used the long Banana and grated them)
    Whole Wheat Flour - 1 Cup
    Oats - 1 Cup
    Brown /Regular Sugar - 1/2 Cup
    Curd/Yoghurt - 6 Tablespoon
    Oil - 2 Tablespoon
    Baking Soda - 1 Teaspoon
    Milk - 2 Tablespoon

    Method

    • Pre heat the oven at 150 C
    • Take a Loaf tin, grease it with butter and dust it with Maida. 
    • In a mixing bowl, whisk together, Milk,curd,oats,sugar,oil and Banana. 
    • In another bowl, mix wheat flour,baking soda together 
    • Now add the Wheat Flour +baking powder to the prepared wet ingredients little by little till it is incorporated well.
    • Now pour this prepared mixture into the prepared loaf tin and bake for 20 -30 minutes at 150 C or till it is done.
    • Allow it to cool for 10 minutes and then de-mould from the Loaf tin.
    • Allow it to cool completely in a cooling rack and then slice into pieces.

    Oats Uttappam / Uthappam 

    Oats, Oats and Oats. Everyone is looking at adding Oats into their diet in one way or another and I am no exception.

    This is a quick, easy and filling Breakfast which needs very few ingredients.



    Ingredients

    Oats - 1 Cup (I have used Quakers Oats)
    Semoline/Rava - 1 Cup
    Salt and Oil
    Onion - 1 (Finely Chopped)
    Green Chillies - 2 (Finely Chopped)
    Water - As required

    Method

    • Heat a pan and place the Oats and toss for few minutes till it is slightly warm.  (If your Oats is fresh and New you can skip this step)
    • Then run it in the mixer or food processor and make it into powder.
    • In a bowl, add the powdered Oats and Sooji (Rava), add salt and mix.
    • Use enough water to make it into a Dosa Batter consistency.
    • Leave it aside for 10 minutes. (If possible or else skip this step)
    • Warm the Dosa griddle, once it is warm add a ladle of the Batter and spread it like a Dosa.
    • Smear some oil on the sides and sprinkle onion and gren chillies as mush as you wish.
    • Cover the Uttappam with a lid for 1-2 minutes and serve hot.

    Oats Bun

    I have made these Buns from the recipe Back of the Bag Oatmeal Rolls. In my opinion, Both the Bread and Bun made with this recipe tasted good. My hubby liked the Bun better and my Mom liked the Bread better. Anyway, this recipe is a keeper.



    Ingredients

    Yeast - 2 teaspoon
    Warm Milk - 11/4 Cup (Not hot, just warm)
    Maida/All Purpose Flour - 3 Cups
    Rolled Oats - 1 Cup
    Unsalted Butter - 2 Tablespoon
    Honey - 3 Tablespoon
    Salt - 1 1/2 Teaspoon
    Sugar - 1/2 Teaspoon
    Oats - For Sprinkling on the top


    Method

    In a bow, add the warm milk,salt and sugar and mix well. To this add the Yeast and allow it to rest for 5 minutes or till the yeast rises.

    To this add Honey, Butter,oats,Maida and knead into a soft dough. Let it rest for 1 hour or it is doubled.



    Now, take it to a greased surface, punch the dough down and knead it.

    Roll it into a  ball and place it in a greased loaf mould or in Baking tray.

    Allow it to rest for 1 hour or till it doubles.

    Pre heat the oven at 180C in the bake mode.

    Slightly brush the surface of the Bun with some milk or water. Add some oats on the top.

    Bake it at 180 C 20 minutes.

    Back of the Bag Oatmeal Rolls 

    It is been quite sometime that I did some baking. So I decided to bake something. I had got a new Bread loaf Mould so wanted to make a Bread. With the recipe I was able to bake a Big Loaf of Bread and 4 rolls. This recipe has loads of Oats too. I got his recipe from kingarthurflour.


    Ingredients

    Yeast - 2 teaspoon
    Warm Milk - 11/4 Cup (Not hot, just warm)
    Maida/All Purpose Flour - 3 Cups
    Rolled Oats - 1 Cup
    Unsalted Butter - 2 Tablespoon
    Honey - 3 Tablespoon
    Salt - 1 1/2 Teaspoon
    Sugar - 1/2 Teaspoon
    Oats - For Sprinkling on the top




    Method

    If you are making Bread, cut the loaf into slices when the loaf has completely cooled down.

    You can toast this or have it with Jam and Butter.

    Oats Biscuits

    I love to bake. The beautiful aroma that fills the house while baking is amazing.The moment I found this recipe online I jumped and went to my kitchen to make it. It was so easy and simple. The fabulous thing about this cookies is that it is eggless and melts in your mouth.

     Ingredients

    Oats - 1 Cup (I used Quaker Oats)
    Butter - 1/4 Cup
    Sugar - 1/4 CUp
    Maida/All purpose Flour - 3 Tablespoon

    Method

    In a Mixer, powder the Sugar. Take the powdered sugar in a bowl , add the butter and cream it well.

    Take the Oats in a mixer and make it also into a powder.

    To the Butter sugar mixture add the powdered oats and mix well, then add the all purpose flour and mix well.

    Cover the bowl with a cling Film and let it sit in Refrigerator for 15-30 minutes.

    After 15 - 30 minutes remove the mixture from the refrigerator and make divide them into equal sized balls.

    Slightly flatten the balls and arrange them on a baking tray lined with Aluminium foil.

    Bake it the preheated oven for 15 to 20 minutes at 180 degree Celsius.





    Tips


    • The cookies will be extremely soft when it is cooked so allow it to cool down.
    • Don't worry if it breaks it is hot, allow it to cool, it will be fine.

    Oats KuzhiPaniyaram

    As promised, i am posting the recipe of Oats Kuzhi Paniyaram. If you taste this once, you will make this very often. This is tastier than the Kuzhi Paniyaram made from Leftover Dosa batter.Sending this to the Diabetics recipe event hosted by Priya.

    Ingredients

    Oats Adai Batter - 1 cup
    Onion - 1/4 Cup (Optional,Finely Chopped)

    Method

    Heat the Paniyaram vessel and drizzle some oil and then add the oats Adai and cook for 2 minutes.
    After 2 minutes, flip and cook for 2 more minutes.

    Serve with Chutney of your choice. I had it with green Mint Chutney and it tasted heavenly.

    Note:

    • This Paniyaram takes a minute longer than the regular paniyaram to get cooked.
    • As we are adding Oats, the Paniyaram is soft and Tasty.

    Oats Adai

    Oats adai is very tasty and healthy...This recipe was told to my mom by her doctor. She did not try but I did and it is super easy. Only thing is, unlike Lemon Oats, you need to plan in advance to make this dish.

    This is pretty much like our usual Adai with lots of Oats. Sending This to Priya's Diabetic Friendly Recipe event.




    Ingredients

    Gram Dhall - 1/2 Cup
    Toor Dhall - 1/4 Cup
    Urad Dhall - 1 Tablespoon
    Broken Yellow Moong Dhall - 1 Tablespoon
    Masoor Dhall - 1/4 Cup (Optional)
    Oats - 1 Big Cup
    Dry Red Chillies - 6 (Adjust to Taste)
    Asafoetida - A pinch
    Salt and Oil.

    Method

    Wash all the dhall and soak them for 3-4 Hours. In a blender add the Oats and Dry Red Chillies and grind coarsely.

    Remove it and keep it in a vessel. In the same blender add the soaked dhall and grind them coarsely. Add water as necessary. Now pour this Dhall batter into the Oats powder and stir it well.

    Add Asafoetida and Salt.Voila the oats Adai Batter is ready.

    You can store this in Refrigerator and use for 2 days. However, in my house like Dosa becomes Kuzhipaniyaram the next Day, Oats Adai becomes Oats Kuzhipaniyaram the next Day (Will Post the oats Kuzhi Paniyaram Recipe soon)

    Now late make the Oats Adai. Take a Dosa Tawa and put it on the stove.
    Once it is heated, like our dosa pour the batter on the Tawa and smear it in a circular fashion.

    After 30 seconds smear some oil on the side and flip it and cook it for another minute.

    Serve it with Spicy Onion Chutney.

    Note:
    • The Oats Adai absorbs lot of water, so check the consistency before making the Adai and add water as necessary. 
    • The Oats Adai will not be as Thick as the usual Adai.

    Samba Godumai (Broken Wheat) - Oats Idli

    Again Me and Oats was always poles apart. Whenever I have Oats porridge, immediately I feel Hungry (LOL).

    So I had to find some recipe to have Oats that is tasty and filling and found the recipes - Lemon Oats, Oats Adai and Oats Idli.

    All this recipe are tasty and filling too. Sending this recipe to Priya Event on Diabetic Friendly recipes.




    Ingredients:

    • Oats - 1 cup (I used Quaker Oats)
    • Samba Wheat Rawa - 1/2 Cup.
    • Mustard - 1/2 Teaspoon
    • Urad Dal/Gram Dal - 1 Teaspoon each
    • Green Chillies s - 2 (Finely Chopped)
    • Ginger - 1/2 teaspoon (Minced)
    • Curd - 1/2 CUp
    • ENO Salt - 1 Sachet/1 Teaspoon
    • Salt
    • Oil
    • Green peas and Carrot (grated)- Optional

    Method

    Dry roast the Oats in a dry Kadai for a minute. Then run it in a mixer and coarsely powder and keep it aside.
    Meanwhile, in a Kadai, add a teaspoon of oil and splutter the mustard seeds and then add gram dhall and Urad dhall and cook for 30 seconds. then add the green chillies, ginger and Samba Godumai rawa and roast for a minute.

    In a Bowl, mix the powdered oats, ingredients form the kadai, salt and curd and mix well. Add water as necessary  The batter should be at Idli Batter consistency.

    Add the vegetable to the batter. Make the Idly pot ready. Smear the Idly plates with oil.

    Just before adding the batter to the idly plate, add ENO to the prepared batter and give a quick mix and place it in the Idly plate and steam it for 15- 20 minutes.

    Serve Hot with Spicy Onion Chutney.

    Lemon Oats

    I got this recipe from here. I am not a great fan of Oats, but after making this once I started loving it.

    Now, I make it once in 2 days. It is easy, tasty and filling.

    That too, it is savoury. I love it.Sending it to Priya's Event - Diabetic Friendly Recipe. 



    Ingredients
    • Oats - 1 cup (I used quaker Oats)
    • Water - 11/2 Cup (Use water based on the consistency you like it)
    • Oil - 1/2 teaspoon
    • Mustard- 1/2 Teaspoon
    • Gram Dhall/Urad Dhall/Ground Nut - 1/2 Tablespoon
    • Green Chillies - 2 (Finely CHopped)
    • Lemon - 1/2
    • Hing/Turmeric Powder - 1 pinch
    • Salt - To taste
    • Curry leaves and COriander leaves - For Garnishing

    Method

    1. In a pan, heat the oil and add the mustard. 
    2. After the mustard splutters add the gram dhall,urad dhall and groundnut and roast them for 30 seconds.
    3. Then add the turmeric powder and hing and give a quick stir and add the green chilles and then add water and salt
    4. Once the water boils, add the oats and stir it. 
    5. Now cover the pan with the lid and cook for 1-2 minutes. 
    6. Then stir it once and add the curry leaves and Coriander leaves and switch off the stove. 
    7. Now squeeze the lemon and stir and serve hot.
